  • 2 acorn squash
  • ½ pound ground turkey sausage
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • Fresh herbs: thyme, sage, rosemary
  • Salt and black pepper
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat oven to 400°F. Halve the acorn squash, scoop out seeds, and place cut-side down on a lined baking sheet. Bake for 20 minutes.
  2. In a skillet over medium heat, cook ground turkey sausage until browned.
  3. Add diced onion to the skillet; sauté until softened. Mix in kale, garlic, celery, apple, and herbs; cook for another 5 minutes.
  4. Scoop out some flesh from the roasted squash and mix it into the filling; season to taste.
  5. Generously fill each squash half with the mixture and return them to the oven for an additional 15 minutes. Top with feta cheese and nuts during the last 5 minutes of baking.
