  • 3 1/2 cups grated zucchini (well-drained)
  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 box of corn muffin mix (8.5 ounces)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a greased baking dish.
  2. Grate the zucchini and squeeze out excess moisture. Chop the onion and jalapeño.
  3. Sauté the onion and jalapeño in a skillet over medium heat until soft.
  4. In a large bowl, mix the zucchini, sautéed vegetables, half of the cheese, corn, eggs, garlic powder, cumin, salt, and pepper.
  5. Gently fold in the corn muffin mix until just combined.
  6. Pour into the prepared baking dish and top with remaining cheese.
  7. Bake for about 50 minutes until golden brown.
