  • 3 pounds Beef chuck roast (sliced thin and cut into pieces)
  • 1 Small onion (diced (about 1 cup))
  • 3 cloves Garlic (minced)
  • 15 ounces Canned light red kidney beans (drained and rinsed)
  • 15 ounces Canned dark red kidney beans (drained and rinsed)
  • 8 ounce Canned tomato sauce
  • 15 ounces Canned fire roasted diced tomatoes
  • 2 cups Beef broth
  • 2 tablespoons Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1/2 teaspoon Ground black pepper

Instructions

  1. In a large dutch oven, heat olive oil over medium-high heat. Sauté beef pieces with diced onion until browned and tender.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Drain excess fat, then stir in beans, tomato sauce, fire-roasted tomatoes, beef broth, chili powder, cumin, salt, and black pepper.
  4. Simmer briefly before transferring to a slow cooker.
  5. Cover and cook on low for 4-6 hours until flavors meld beautifully.
