  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1/3 cup brown sugar
  • 3 1/4 cups powdered sugar

Instructions

  1. Cream together softened vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until light and fluffy.
  2. In a separate bowl, whisk all-purpose flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  3. Gradually mix dry ingredients into wet ingredients until just combined. Chill dough for at least 30 minutes.
  4. Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper.
  5. Scoop out dough into 2-inch balls and flatten slightly before placing on the baking sheet.
