  • 8 thick slices of sourdough bread
  • 3 balls fresh mozzarella (each 125g), sliced thin and dried
  • 8 sun-dried tomatoes, dried and chopped
  • 4 tablespoons pesto
  • Butter, as required

Instructions

  1. Gather your ingredients. Slice the mozzarella thinly and pat dry to remove excess moisture.
  2. Lay out four slices of sourdough bread. Spread 1 tablespoon of pesto on each slice. Top two slices with mozzarella, sun-dried tomatoes, and any additional toppings you like. Place another slice of sourdough on top to form a sandwich.
  3. Heat a non-stick skillet over medium heat and melt butter. Cook the sandwiches for about 3-5 minutes on each side until golden brown and crispy.
  4. Remove from skillet, let cool slightly, slice in half, and serve warm with extra pesto if desired.
