  • 23 tablespoons extra virgin olive oil
  • 1/2 cup almond milk
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 cup organic raisins
  • 1 1/2 cups raw pecans
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 2 cups vegan marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C). Peel and cube the sweet potatoes, then boil them until fork-tender (about 15-20 minutes). Drain well.
  2. In a mixing bowl, mash the sweet potatoes with olive oil, almond milk, vanilla extract, and butter until smooth.
