  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon (for topping)
  • 1/8 tsp ground nutmeg (for topping)
  • Pinch of ground allspice
  • 1 cup organic raisins
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Peel and cube sweet potatoes, then toss with olive oil, cinnamon, and nutmeg.
  2. Spread on a baking sheet and roast for about 30 minutes until tender.
  3. Blend roasted sweet potatoes with almond milk, vanilla extract, butter, brown sugar, and maple syrup until smooth.
  4. Pour into a greased baking dish and top with soaked raisins, mixed spices, vegan marshmallows, pecans, and additional maple syrup.
  5. Bake for another 30-40 minutes until bubbly and golden brown.
