  • 3 tbsp grapeseed oil
  • 6 tbsp unsalted butter
  • 3 tbsp all-purpose seasoning
  • 1½ tbsp black pepper
  • 2 tbsp smoked paprika
  • 4 thyme sprigs
  • 5 garlic cloves (smashed)
  • 1 onion (sliced into medallions)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken by removing the backbone with kitchen shears or a sharp knife.
  3. Flatten the chicken by pressing down on each side of the back until it cracks.
  4. Season the chicken with grapeseed oil and all-purpose seasoning, massaging it into the skin.
