  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 pound lean ground turkey
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ cup black beans (drained and rinsed)
  • ½ cup canned corn (drained)
  • ½ cup diced tomatoes
  • ¼ cup chopped fresh cilantro
  • ½ cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and pierce each potato several times with a fork. Bake directly on the oven rack for about 45–50 minutes until tender.
  2. In a skillet over medium heat, heat olive oil. Sauté the diced onion for about 3–4 minutes until translucent. Add minced garlic and cook for another 30 seconds.
  3. Stir in lean ground turkey and cook until browned. Season with smoked paprika, chili powder, cumin, salt, and pepper.
  4. Mix in black beans, corn, and diced tomatoes; simmer for about 5–7 minutes.
  5. Once the sweet potatoes are cooked, slice them lengthwise and gently mash the flesh. Spoon in the turkey mixture, top with shredded cheese, and return to the oven for an additional 5 minutes until cheese is melted.
  6. Garnish with fresh cilantro before serving.
