  • 0.25 cup all-purpose flour
  • 0.25 tsp salt
  • 3 large eggs
  • 2 tbsp unsalted butter (melted)
  • 0.5 cup all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 cup unsalted butter (cold and cut into small pieces)
  • 0.25 cup granulated sugar (for extra sweetness, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter and sugars until light and fluffy. Add the egg and vanilla extract, then mix in flour and baking powder until just combined.
  3. Press half of the dough into a greased 9×13 inch baking pan to form the cookie base.
  4. In another bowl, whisk together lemon juice, granulated sugar, flour, salt, eggs, and melted butter until smooth.
  5. Pour the lemon filling over the cookie crust evenly.
  6. For the crumble topping, combine flour, sugar, and cold butter pieces until crumbly.
  7. Sprinkle the crumble topping over the lemon filling.
  8. Bake for 40-45 minutes or until golden brown and set. Let cool before serving.
