  • 2.53 lbs boneless beef chuck roast
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 2 large carrots
  • 2 celery stalks
  • 46 cloves garlic
  • 1/4 cup tomato paste
  • 1 cup dry apple vinegar
  • 1 can crushed San Marzano tomatoes (28-ounce)
  • 1 can diced tomatoes (14.5-ounce)
  • 1 cup beef broth
  • Herbs: bay leaves, oregano, thyme, rosemary
  • Optional: red pepper flakes for spice

Instructions

  1. Pat the beef cubes dry and season with salt and pepper.
  2. Sear half of the beef in olive oil until browned on all sides.
  3. Sauté onions, carrots, and celery until softened; add garlic and cook until fragrant.
  4. Stir in tomato paste and deglaze with apple vinegar.
  5. Combine sautéed vegetables with seared beef in a slow cooker along with crushed tomatoes and broth.
  6. Cook on LOW for 6-8 hours or HIGH for 3-4 hours until tender.
  7. Shred the beef and return it to the sauce; let rest before serving over pasta.
