  • 5 pounds sweet potatoes
  • 1 cup water
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup melted butter
  • 1 cup brown sugar
  • 23 teaspoons salt
  • ½ cup heavy cream (or milk)
  • ½ cup flour
  • 1 cup chopped pecans
  • 34 cups mini vegan marshmallows

Instructions

  1. Cook sweet potatoes in boiling water until tender. Drain and mash until smooth.
  2. Preheat oven to 375°F (190°C). In a bowl, mix mashed sweet potatoes with eggs, vanilla, melted butter, brown sugar, salt, and cream.
  3. Spread the mixture in a greased 9×13 baking dish.
  4. Combine brown sugar, flour, melted butter, and pecans in another bowl to create the topping. Sprinkle it over the sweet potato base.
  5. Bake uncovered for 20-25 minutes until golden brown.
  6. Add vegan marshmallows on top and bake for an additional 5-7 minutes until puffy.
