  • 1 and 1/2 cups milk (dairy or non-dairy)
  • 2 large eggs
  • 1/2 cup pure maple syrup
  • 1/2 cup unsweetened applesauce
  • 3 cups old-fashioned whole oats
  • 1 teaspoon baking powder
  • 1 and 1/2 teaspoons cinnamon powder
  • 1/4 teaspoon nutmeg powder
  • 1/2 teaspoon vanilla essence
  • 1/4 teaspoon salt
  • 1 generous cup chopped peeled apple
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: coarse sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together milk, eggs, maple syrup, applesauce, and vanilla essence.
  3. In another bowl, mix oats, baking powder, cinnamon powder, nutmeg powder, and salt.
  4. Combine dry ingredients with wet ingredients until just mixed; gently fold in chopped apples (and nuts if using).
  5. Spoon the mixture into a greased muffin tin until three-quarters full. Optionally sprinkle coarse sugar on top.
  6. Bake for approximately 28 minutes or until golden brown and set in the middle.
  7. Allow cooling slightly before serving.
