  • 20 gyozas (or potstickers)
  • 4 cups chicken broth
  • 1 can (14 oz) unsweetened coconut milk
  • 1 tbsp vegetable oil
  • 4 garlic cloves (grated)
  • 1 tsp grated ginger
  • 3 tbsp Thai red curry paste
  • 2 tbsp lime juice
  • Optional: Your favorite vegetables (spinach, bell peppers, snap peas)

Instructions

  1. Prepare ingredients: Bring salted water to boil for gyozas. Grate garlic and ginger.
  2. Sauté garlic and ginger in vegetable oil over medium heat until fragrant (about 30 seconds).
  3. Add chicken broth, coconut milk, soy sauce, fish sauce, toasted sesame oil, brown sugar, Thai red curry paste, and lime juice. Stir well and bring to a boil; simmer for 5 minutes.
  4. Cook gyozas in boiling water according to package directions (2-3 minutes). Drain well.
  5. Serve: Divide gyozas between bowls and ladle hot soup over them. Garnish with fresh chives and any additional veggies.
