  • 500 g butternut squash
  • 4 cloves garlic
  • 1 yellow onion
  • Olive oil
  • 500 g shelf-stable gnocchi
  • 50 g grated parmesan
  • Juice of 1 lemon
  • 50 g turkey strips
  • Fresh mozzarella

Instructions

  1. Preheat your oven to 180ºC.
  2. Toss butternut squash cubes, sliced onion, and garlic on a baking tray with rosemary and olive oil. Roast for about 30 minutes until tender.
  3. Blend the roasted vegetables into a smooth purée.
  4. In a frying pan, cook turkey strips until crispy.
  5. Stir the purée into the pan with gnocchi, milk, and a splash of water; simmer gently for about 8-10 minutes.
  6. Add parmesan cheese and lemon juice, mixing well.
  7. Top with mozzarella and grill for about five minutes until bubbly.
  8. Garnish with remaining turkey strips and serve warm.
