  • 1 large whole egg plus 1 yolk
  • 1 1/2 pounds ground turkey
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil or avocado oil, for frying
  • 2 tablespoons ghee or unsalted butter
  • 1/2 cup finely minced onion
  • 6 cloves garlic, pressed
  • 2 teaspoons Italian seasoning
  • 15 ounce can organic pumpkin puree
  • 1 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken stock
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup
  • 1 tablespoon chopped fresh sage

Instructions

  1. In a bowl, soak breadcrumbs in milk for 2-3 minutes. Mix in onion, garlic, sage, parsley, Italian seasoning, parmesan cheese, and both eggs until combined.
  2. Add ground turkey, salt, and pepper; mix gently without overworking.
  3. Form into meatballs and chill in the freezer for 20 minutes.
  4. Heat oil in a skillet and brown meatballs on all sides; cook until internal temperature reaches 165°F (74°C).
  5. For the sauce, sauté onions and garlic in ghee and olive oil until softened. Stir in pumpkin puree and chicken stock; let simmer.
  6. Whisk in parmesan cheese and heavy cream before adding meatballs back into the sauce to warm through.
