  • 1 3/4 cups apple juice
  • 2 tablespoons apple cider vinegar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla bean paste
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon salt

Instructions

  1. Core and chop the apples into large chunks. Combine in a pot with apple juice and apple cider vinegar. Bring to a boil, then reduce to a simmer, covering for about 30 minutes until softened.
  2. Stir in brown sugar, vanilla bean paste, cinnamon, nutmeg, cloves, and salt. Mix well to combine.
  3. Use an immersion blender or transfer to a standard blender to blend until smooth.
  4. Return to the pot and cook uncovered over medium heat for 30-45 minutes, stirring regularly until thickened.
  5. Your Vegan Apple Butter is ready when thick enough not to easily drizzle off a spoon. Enjoy it warm on toast or pancakes!
