  • 1/2 tablespoon cornstarch
  • 3 tablespoons vegan butter
  • 2 tablespoons brown sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1/2 cup vegan butter (room temperature)
  • 1/2 cup + 2 tablespoons granulated sugar
  • 1/4 cup light brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1 1/2 cups + 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare your flax egg by mixing ground flaxseed with water and letting it sit for five minutes until gel-like.
  2. In a mixing bowl, cream together room temperature vegan butter and sugars until fluffy. Add the flax egg and vanilla, mixing until well combined.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and cornstarch. Gradually add to wet mixture and stir until just combined.
  4. For the pecan filling, melt remaining vegan butter with brown sugar and maple syrup over low heat. Stir in chopped pecans, water, and cornstarch until sticky.
  5. Preheat oven to 350°F (175°C). Scoop cookie dough portions, flatten slightly, add a teaspoon of pecan filling in the center, fold around the filling, and roll into balls.
  6. Roll in granulated sugar before placing on a lined baking sheet. Bake for about 12-15 minutes until golden around the edges.
